About Cudaway, Handmade Chef Knives Made in Montana

Cudaway is a Montana-based knife company that builds handcrafted premium kitchen knives for home cooks and professional chefs across America who refuse to settle.

From a pottery wheel to a Bozeman barn

Morgan's journey to knifemaking began in Charlotte, North Carolina, where he studied studio art and business at UNC Wilmington and found his passion for functional art on a pottery wheel. After college, he set out on a 4,253-mile TransAmerica dirt bike expedition. Following injuries and some soul-searching, he spent two years in Alaska working construction and guiding raft trips, living the outdoor life he'd been chasing. It was in Jackson, Wyoming, working for New West KnifeWorks, that Morgan learned the craft that would become his life's work.

When he moved to Bozeman to start Cudaway, he began in a run-down barn of fire hazards and weathered boards. That humble beginning still reflects the company's philosophy: no shortcuts, no excess, just the best kitchen knives in America by any means necessary.

A year in, Morgan met Duncan, a CNC machinist and fellow knifemaker who shared his obsession with quality. Duncan grew up in Gardiner and, like Morgan, chose Bozeman for the room to live and the mountains to recharge in. Together they saw a void between expensive custom knives with long waitlists and mass-produced blades with no character. Cudaway fills that gap with premium handcrafted kitchen knives that skip the custom-blade price tag, yet stand apart from mass production in every way that matters.

How a Cudaway knife is made

Every Cudaway chef knife begins as a blank piece of steel and undergoes a meticulous transformation. We use a cryogenic heat-treating process that aligns the microstructure of the steel, drawing out the highest possible strength and hardness. Our blades are hand-ground and finished using stock-removal methods that demand a keen eye, steady hands, and years of practice. What looks like "just standing at a belt grinder" is finesse earned over thousands of hours. One extra second on the belt can ruin a knife, so our knifemakers work with absolute focus.

The result is a blade that's harder and thinner than most competitors', one that holds an exceptional edge while staying durable across a lifetime of cuts. We pair each blade with premium G10 fiberglass laminate or stabilized Ironwood handles, then wrap it in saddle-grade leather made with Montana hide. The final product is a kitchen knife built for generations and backed by our lifetime warranty, with free professional sharpening forever.

Why we make knives

As Morgan puts it, "In the knife business, our reputation hinges on every single knife made." We don't scale up at the expense of quality, and we don't cut corners to hit sales targets. We make knives because we love making knives. Knives are primal tools that have helped humans thrive, and every home cook deserves the satisfaction of a razor-sharp, well-balanced blade.

Cudaway takes pride in USA manufacturing, from our premium handles to our leather sheaths. We built this business around a simple belief: knives are the cornerstone of every kitchen, and people should be proud to use them and hand them down to the next generation.

From a run-down barn to a recognized name among discerning home cooks and professional chefs nationwide, Cudaway's story is one of deliberate growth rooted in intention and passion. We're committed to filling more kitchens with quality blades while protecting the reasons we opened in the first place: the love of the craft, the community, and the wild places that matter to us.
